Recipe below 👇 Ingredients • 1 large cucumber • ½ cup cooked sushi rice • 8 oz smoked salmon • 1½ tbsp teriyaki sauce or soy glaze • ½ tsp sesame oil (optional, for extra flavor) • 1 tsp toasted sesame seeds • 1 green onion, finely sliced • Soy sauce or spicy mayo, for dipping Instructions 1. Prep the cucumber: Slice the cucumber in half lengthwise. Scoop out the seeds with a spoon to create shallow boats, then pat dry. 2. Fill with rice: Spoon sushi rice into each cucumber half, pressing gently to form an even base. 3. Add salmon: Layer smoked salmon evenly over the rice. 4. Drizzle & garnish: Top with teriyaki sauce, sesame oil (if using), sesame seeds, and green onions. 5. Serve: Slice into bite-sized pieces or enjoy whole as sushi boats.
